We are heading out to go camping tomorrow. This meant the day was spent planning, packing and other endless distractions most typically created by my sweet children. The morning began with my Mom’s tasty granola, coffee and milk.

Somewhere in there I felt hyped up by the long to-do list and decided to forget about it all for a bit and go for that jog I keep attempting daily.

When I got home, my tummy was growling and Xerxes had finished cooking the chicken for the lunches we were taking the next two days on our camping trip.

I chopped it all up and then Juliette helped me whip up the dressing and pulled the grapes off of the stems, so I was able to cut them into quarters. I also chopped zucchini and cucumbers to add. We tossed in chopped almonds and called it a salad.photo-86

It was pretty darn good. Xerxes, Juliette, my Mom and I nearly ate half of it. Fortunately, it is not the only dish on the lunch menu for the camping trip.

Within a couple of hours, my Mom and I were packing the kiddos in the car to go to the grocery store for the remaining camping foods.

A man needs to take the tadalafil generic cheap pill an hour before you start with your love making session. When we returned I was determined to master the dough that had failed last Saturday. I mean, if you are frantically packing up for a camping trip, the obvious step is to prepare Homemade Pizzas, right? But, all we could consider was the homemade tomato sauce and mozzarella that clearly needed some attention we would be unable to give when we were away.

photo-84In the meantime, we were giving Saturday night’s dough a second chance to prove itself and let it raise for almost 2 days on the counter. It seemed to have more life than I anticipated. So, in the end the mozzarella cheese and homemade tomato sauce had enough dough for six pizzas. A bit excessive for the four adults and one toddler they were meant to serve.

After letting the dough sit, I prepared the remaining camping food, including Homemade Marshmallows! I can tell my Mom wanted to protest the marshmallow project, but I convinced her that after making four batches in one week, Xerxes and I could make them in our sleep. That was clearly an over-statement on my part as it took quite a bit longer than expected. Regardless those Marshmallows look damn good.

My brother arrives at midnight to join us for camping/huckleberry picking fun. So, I will be staying up a bit longer, but I hope you my friend have sweet and *marshmallow fluff* dreams!

Last night, my Mom gave Juliette a ‘milk cow’ similar to the one I had as a child. Juliette was thrilled with her new gift and willingly went to bed dreaming of ways to use it, I am sure. The next morning, Mimi and her sat down for homemade granola with the cow ready to go. photo-75

After our morning run, Xerxes requested French Toast and I was happy to oblige. My Mom’s Honey Whole Wheat is soft & dense and makes for an incredibly hearty French toast. This particular batch when sliced looks a bit like this, too:

As the day progressed we were busying ourselves preparing for our camping trip and shredding branches in the back yard. Lunch quickly became leftover Moussaka, pasta salad and Cucumber Dill Feta Salad.

About midday we packed up to go wine tasting. We started our mission at one of our favorites, Kiona Winery. It is run by grandparents of a darling gal who my sister and I danced with. When we arrived our server was actually the mom of another family who not only danced, but who went to our church and school growing up. It was fun to see her again and of course to sample the lovely wines she poured in the gorgeous tasting room.

Next, we headed to my favorite Winery of all time: Fideltas. The family also attended our church (noticing a trend? Catholics apparently love wine) and the eldest daughter was one of my favorite first ballet students. Apparently, she has not only graduated from college (wow, feeling old!) but she is in the PeaceCorp (wowsa, feeling impressed!)

But, despite the connections we actually adore this winery because it is just ridiculously good. Every time I sip Fidelitas I feel this is how wine should taste. Simple, rich. Perfect, lovely. And I am actually not alone in my admiration. Charlie Hoppes was named Winemaker of the Year by Seattle Magazine.

We also met up with my ballet director Debra Rogo, her husband Joel and their daughter who is about to enter graduate school. They were holding a meeting to plan a fabulous fundraiser next year and I look forward to hearing how the plans will transpire. Debra also became a big hit with Juliette when she let her play a cupcake game on her Ipad.

After our tasting, we headed outside to dine on a picnic of my Dad’s smoked salmon, cheese, crackers, and a bit more. It was a gorgeous view and just a tiny bit too hot, but we loved it.

The afternoon fun ended with a quick trip to Costco to stock up on a few items for the camping trip. We also grabbed a chicken that everyone munched on with veggies and dip for a easy, not too filling dinner since our picnic was late in the afternoon.

May your dreams be as perfect as the sips of wine I tried earlier today,

photo-74Rolling out of bed this morning I declared we should go running. Until last year, I basically refused to run. I was the kid who attempted to get out of it in P.E. every class. Yup- I was that girl. I would hardly say I was without physical activity since I danced at least 30 hours a week growing up, but sports and sweating without music, groove and steps just seemed useless and silly. And then if you add a flying object to the mix… I was screwed. My eye hand coordination is meant for knives and fire, not balls and random rules. I realize sports are a part of the American lifestyle, but in my perfect world we would all be dancing, creating, building and performing.

Fortunately, as a grown-up I finally get to decide what I want to do and I married a guy who loves art and individual sports as much as I do. I ski. He snowboards. We hike, backpack, rock climb (not much anymore) and basically do whatever individual outdoor sports we have time for.

Last summer, I chatted with a distant relative about Lilly’s Table and in exchange he told me about how he works on Couch to 5K. In the past, anytime I ran I would screw up my knees and be hobbling for a week after. It really made running seem dumb. And painful. But, I did a bit of research on proper running. It is just toes down! Which is exactly how you run in ballet and suddenly it all made sense.

Not long after my conversation, Xerxes and I each grabbed the C2-5K app and hit the trail near our home in Tucson. I was rocking out and ready to sign up for a 5K.

Then I got pregnant.

It was awesome for me and my family! But, not so good for the runner in me. Morning sickness was the beginning of the end.

Now, 10-weeks postpartum, nearly a year from that first run, getting my running shoes on just seemed irresistible. With Xerxes not hurrying to work, there seemed time, finally. I showed him all of the homes of friends and acquaintances who grew up around me and in general we had a lovely time together.

When we got home, my Mom told me a childhood friend was stopping by with just two of her kiddos. She is having her fifth babe September 1st and her other two were at the school we grew up attending together.

We had a lovely time visiting, me still in running clothes, glistening, and not having eaten anything. My Mom casually served us delightful Strawberry Smoothies, toast and coffee. A breakfast that reminds me of my childhood… my home.

My friend lives on 2 1/2 acres not far from my parents. They have 12 chickens and 4 goats. Our next visit, Xerxes and I hope to go see where she lives. Just talking to her about her 9+ egg per day harvest made me miss having chickens, so much. Xerxes is planning to put a coop in soon. I can’t wait to get new “girls”. photo-73For dinner, my Mom defrosted and baked a Moussaka that she had made with veggies from the garden she was trying to use up. It is basically, a meat, veggie, tomato sauce covered with a silky, creamy egg custard topping.

I also sliced up some of the cucumbers that have been driving her crazy and tossed them with a homemade dijon dressing, feta and dill. It was a nice pairing for our Greek dinner. Of course, bread and herb butter made another appearance, too.

For dessert, Xerxes and I had small dishes of the Tillamook Cookie Dough Ice Cream and not long after went to bed.

Sweet dreams, sleepy heads!

photo-72Coming to your hometown for just a few days typically means there is not nearly enough time to see everyone. And when you bring home one of the most recently born children, there is increased responsibility to see everyone. So, my Mom set up a “viewing”. Although, several of us thought that sounded a bit too much like a funeral and we attempted to change it to a “showing”. I am not sure we were successful with the re-name, but the party certainly was. Basically, she said stop by anytime after 1pm and that is what folks did.

Of course, we had to have snacks because we love food so much. While someone prepared a quick breakfast before we headed to mass, I prepared the Raspberry Butter and Herb Butter. Two classic Allison family party foods. Actually, the Raspberry Butter is usually Strawberry Butter, but since we had Raspberry Jam from the bushes in the backyard that seemed more appropriate.

The butters are very similar a 1/2 cup butter and 8 ounces cream cheese are blended together. For the sweet variation, about a 1/2 cup jam is blended in. For this batch we strained the seeds out of Raspberry Jam, but other variations are delightful too. For example, we had Apricot Butter at our wedding that was paired with Roast Beef, horseradish, and more to stuff into sandwiches.

For the Herb Butter, after the butter and cream cheese come together a clove of garlic with a generous handful of fresh basil leaves are whipped into a puree. It is addictive. Want the exact recipe? Head over to Lilly’s Table for the Winter Green’s Butter and use basil instead of arugula.

I also made a simple veggie dip, which I just now realized is not actually on Lilly’s Table… yet! Clearly it will need to go up there soon. It is simply: Greek yogurt, a lemon (zest & juice), a generous amount of chopped fresh herbs and grated parmesan cheese. This has been a hit at multiple parties, so I will work on the exact measurements and photograph it for LT soon.

Xerxes sliced up tons of cucumbers & zucchini from my parent’s garden for crudites as well as some carrots from the store. We put out a bowl of amazing, candy like cherry tomatoes, too. The fruit platter was gorgeous including strawberries, figs, grapes, pineapple and blueberries. There was also a medley of cheese to slice and crackers to pair them with. Friends generously brought items to add to the casual feast.

The day was festive, delicious and bright. Juliette was thrilled that two little girls arrived for her to play with and it certainly made the day lovely for us too to have her entertained, when our job was to meet, greet and catch up with so many folks.

The first part of the day included family friends, mostly from the church I grew up in. Juliette and the first little girl spent their time diving into the dress up clothes, which included dance costumes from my sisters and I. It was quite nostalgic to see her dressed in the lime green and pink tutu butterfly outfit from one of my first recitals. The guests reminisced about how my childhood was full of similar piles of dress up clothes in the basement.

The second half of the day was full of friends from my dance world, including my ballet director and her husband who operate the Mid-Columbia Ballet  and our dear family friends Ashley (who also danced with us) & Angie who run the Bikram Yoga Tri-Cities. Angie’s little two-year old was a treasure for Juliette to play with and they entertained us with ring-a-round the rosie and more.

It was wonderful to see everyone and Zed was in full force, either peacefully sleeping and contentedly being transferred from person to person or peeking his eyes out to look around and show off his big beautiful smile. Everyone generously showered him and Juliette with gifts as well.

The evening included a few more friends who trickled by and then we settled in for a dinner of leftover pasta salad and my Dad’s smoked salmon that we forgot to bring out during party time and more herb butter, because it just made sense with the meal.

I can’t believe I forgot to take a few photos of the gorgeous fruit platter and the other dishes during the day, but in the evening I couldn’t resist quickly capturing the table set in such a pretty manner despite that the meal was a casually tossed together mish-mash of leftovers.

It made me realize, as much as I obsess over the food, a beautiful dinner is not just about what you consume but how and with whom you enjoy it. And the evening was quite delightful, I must say!

May your night be just as precious & sweet,

Lilly

photo-67My Mom and family certainly taught me a lot about cooking. Less about technique and more about the philosophy of eating whole foods straight from the earth. We grew up with my Mom grinding red winter wheat for bread and my parents grew as much as possible in their garden. It was never a preachy lesson. We certainly could eat whatever we truly wanted, but our home was stocked with goodness and this is what I do for my own family without really over-analyzing it on a day to day basis.

When we woke up this morning, Mimi asked Juliette what she would like to have for breakfast. Juliette insisted that we did not bring anything from home and therefore, she stated frantically “there is nothing for us to have!”

We explained Mimi had her Honey Whole Wheat and we could make Eggs in a Hole— one of Juliette’s favorite! Mimi looked at me a bit wide-eyed and said I do not know how to make it. I said I would walk her through it, but Juliette insisted she would show her how. In the end, I made breakfast, Mimi made coffee and Juliette chatted both of us up.

We brought breakfast out on to the back picnic table and had a lovely morning together. Until… a bee stung my Mom and then stuck it’s stinger into Juliette. 🙁

They both screamed in shock and pain. Soon we were racing around trying to make baking soda pastes and pulling the stinger out of Juliette’s toe. My Mom’s leg swelled with the venom (or something) too. They were both pretty miserable and with Xerxes still feeling run down we decided the rest of the morning would be spent watching Finding Nemo. It seemed to do the trick, although, my Mom’s leg is still a bit swollen and hurting.

photo-69Lunch was simply quesadillas with big dollops of sour cream, more Black Bean & Corn Salad and a homemade salsa my Mom made before we arrived.

In the afternoon, my Mom, the kiddos and I headed to the grocery store to prepare for the arrival of our dear family friends who were coming to meet Zed and have dinner with all of us. By the time we returned, we realized the clock was ticking for our pizza dough plans. I put everything together quickly and waited for the yeast to do it’s magic in the bit of sugar water. And then we waited longer. And longer. And then we made another batch thinking maybe the first one was bad. The second didn’t perform either. We debated trying again and in frustration I finally declared we would make pasta instead. The vegetables lying around the house were to be thinly sliced for toppings and instead they were chopped into a quite tasty Pasta Salad.

We started chopping zucchinis, cucumbers, tomatoes and fresh herbs. I whipped up lemon zest, juice, a mustard aioli, and extra virgin olive oil. That was dumped on penne and tossed with chunks of swiss cheese and kalamatas. photo-70My Mom also made her famous Green Beans Almandine to go along with it. For dessert, some of us had Neapolitan and others had Tillamook Cookie Dough Ice Cream.

photo-63Ugh. They are all sick. Xerxes has a slight sore throat. Juliette has the cough. Zedekiah has the runny nose. Combined they seem to make one sick person. Boarding a plane where everyone goes to share germs seems just wrong, but none of them are SO insanely sick that they can’t function.

As a new Mama with Juliette I remember going to a Mom’s group with the pertinent question of “how sick does your child have to be before you keep them from the public?” When I arrived I noticed several children with various interesting symptoms from runny noses to dramatic looking rashes. I kept that question to myself. Clearly it was being answered in some universal way. Since that moment, I have tried to neither judge others for their sick kiddos or myself for my own.

In an effort to get all the packing and preparations done we ate a quick egg & toast breakfast. And I grabbed a coffee while running errands such as getting dog food, gas, etc. We drove by a Farmers Market and just had to stop. I’m glad we did because they had amazing samples of melons from Rocky Ford, interesting European pastries and they were selling my favorite vinegar: Pastamore. We bought a tomato and cauliflower for Lulu. The garden was full of tomatoes until last night’s feast. Lulu is excited to dine on the next ripe batch while we are away.

Driving back from errands we decided to stop by US Thai for our favorite soups. I figured Xerxes would appreciate some broth for his throat. After dining on soup we realized we were all still hungry so I whipped up these peach quesadillas too. Clearly the peach obsession continues.photo-62For dinner on the plane, we brought yogurt for each of us and sandwiches. Xerxes and I each had a Noosa, his honey and mine their new Passionfruit. Juliette choose a Brown Cow greek honey flavored one. We didn’t realize yogurt fell into the ‘liquid’ category for airport security. They informed me that it would be fine if the yogurt was for the infant, which I appreciated except that Zed at merely 2 months old is not exactly ready for yogurt. When they inquired to Xerxes who they belonged to, he quite honestly described the flavors we each gleefully selected. The security attendant kept making eyes at him in an attempt to jedi-mind trick him into stating it was ‘just for the infant’. I pushed my way into the conversation and announced that all three yogurts were for the 3-year old. Figuring if I said they were for Zed, Xerxes might give us away. Oh the trials & tribulations of getting through airport security!

We finally managed to arrive after a long dash through the airport. As we settled in to wait to board, the windows begin to shake from thunder. Juliette was so over-the-top thrilled to see her cousins and Mimi that she was our little Tigger. She apparently was so charming that three different men on our flight offered her candy or sugar of some sort. Is this really a thing? Maybe they just wanted to see how high she could bounce?

Since it was dinner time as we waited, we dove into one of the two sandwiches. I had bought two small loaves of French bread and some olive tapenade. The Homemade Ricotta was spread on with tons of basil and tomato slices. Heavenly.

An hour later, they announced the airport had reopened and we could begin boarding. As soon as we got in the very short line for our small flight, Juliette started the pee-pee dance.  So I waited a touch nervously with Zed as Xerxes ran her to the nearest bathroom. We were second from the end of the line to get on.photo-64

Taking off in a thunderstorm, even one in a distance, is not my favorite thing. Being on a plane with the three most beloved people to you in the world makes the experience more intense, especially in my hormonally driven, post-partum state. Juliette and Xerxes were taking it all in relative stride, while Zed was sleeping and I was just… praying. By the time we were above the clouds, I turned to Xerxes and declared I needed a glass of wine to calm my nerves. A half hour or so later, the wine did the trick and we pulled out the second sandwich and yogurt. Juliette was content watching Ratatouille the whole time and periodically would turn it off “for a quick nap”. Zed slept just like an angel the whole time. Other than turbulence the flight was very good.

When we finally arrived to my childhood home, we were welcomed with  beautiful salads: Tomato & Cucumber and Black Bean & Corn and homemade Honey Whole Wheat Bread.

photo-59Today was entirely dedicated to packing. Well, mostly. I say this because trying to pack with two small ones’ agendas makes for a long day of organizing, doing laundry, making decisions, being interrupted by sadness, pressing toddler questions and more. It is all enough to make you want to lock yourself in the kitchen to cook. Or I’d be happy hanging with a kiddo, but thinking about the logistics of packing is not one of my favorite choirs. Although, we are very excited that packing means we are heading to my parent’s house in Washington state.

In the spirit of procrastination, I found myself considering the fact that we were leaving our now ready to harvest garden. Which meant I gathered up a few tomatoes and a generous handful of basil for breakfast. The result was a paper thin omelette stuffed with minced tomatoes, torn basil and a few small dollops of creme fraiche. We were all very happy with this start.

By lunchtime, I finally had Zed restful and sleepy enough to actually start packing, but then my belly was growling. Juliette and I split a Sunflower Butter & Peach Sandwich. We both inhaled our halves and agreed we needed a second. We also ate a few pinches of almost stale potato chip pieces.

About three hours later, I was mostly packed and ready to run out for a quick appointment. On my way, there I found myself at Whole Foods for a couple of lemons, French bread for tomorrow’s plane ride and a small, cheap Chicken Sonoma Salad Wrap. I make my own Chicken Sonoma Salad and am always happy to eat it this time of year when grapes are starting to become lovely. The wrap was fine although I found myself wanting just a couple cubes more chicken to even out the thick tortilla, but I am not sure it is even worth that complaint.

Next, was Juliette’s official first ballet class. After last week’s attempt we were all very excited the big day had finally arrived. But first, we made a quick stop at Sloan’s Brewery for some happy hour Grilled Artichokes (my recipe is here on Lilly’s Table).

I am not usually one to cry in public, but this was tutu too much watching my own little girl’s story unfold however she wants to play it. Joy.

Coming home, dinner became a major group project. Pasta water started boiling. The milk started to simmer for Homemade Ricotta. We ran to garden and gathered the bulk of the meal, a couple zucchinis and all the tomatoes we could find. All chopped up with sherry, olive oil and three cloves garlic thinly sliced. We kept the veggies cool, folded into the dressing and then tossed in the hot pasta. The creamy ricotta with flecks of lemon peel was prepared to be dolloped on top. We kind of fought over the ricotta until it vanished. Overall, this meal was delightful but especially for this hot night.

Nut & Fruit Kale Salad

Nut & Fruit Kale Salad

Zed is a sniffle head and Juliette keeps coughing. This is disappointing, because we fly on Thursday and I’d rather fly with them healthier. We will do our best to help them fight this between now and then. Zed’s sniffles did manage to help in making me a bit grumpy this morning as we attempted to dash out the door for Xerxes’ dentist appointment. This time was for a cleaning and we want to keep bringing Juliette so that she can see how much fun it is to go. The entire staff is just darling to her, so fingers crossed her turn will be a good experience. Xerxes and I both had some negative childhood dentist situations so we want to get her started on a great foot.

We ended up heading out the door with bowls of yogurt, granola and those amazing peaches in our bowl. I swear I did not manage to get enough coffee into my system, but that probably had more to do with my grumpy mood.

Once the dentist was done, we were all just hungry enough to swing by Whole Foods on our way home. Random items ended up on each of our salad bar plates: chicken, shredded pork, one pork rib, and a medley of interesting salads. We were sure to get the little-one-with-a-cough a big cup of chicken noodle soup which she managed to nurse throughout the entire day until I finally tossed the final drops and slimy noodles away.

Xerxes and I went, which meant dinner needed to happen at 5:30. I pulled out the two leftover salads: Beet Lentil and the Stone Fruit, Corn & Black Bean Salad from yesterday.

I also tossed together a Nut & Fruit Kale Salad using up the various fruits on the counters that were calling for my attention. The dressing was simple, nearly a tablespoon of creme fraiche, dijon mustard and apple cider vinegar I whisked in a couple tablespoons of olive oil and a generous pinch of salt. The shredded kale was massaged in. The chopped peaches, plums, fresh figs, sliced avocado, salty pistachios and marcona almonds were gently folded in. The super sweet fruit, intense kale, creaminess from the dressing and avocado and the almost-too-much salt made for a perfectly balanced addictive salad. We finished it up and there will not be leftovers.

Sweet & nutty dreams to you!

photo-54This day was a bit of a whirlwind. And by the looks of it, so is the rest of this week. Xerxes made me an egg and toast with coffee & milk pretty much as soon as I woke up. I attempted to squeeze a bit of research in and hung with the kiddos. By mid-morning, the smell of the peaches was overwhelming me and so I made Peaches with yogurt and a dollop of creme fraiche. Normally, plain yogurt is not my favorite, but these peaches were so insanely sweet that the plain yogurt just swirled around the fruit making everything into creamy happiness. Writing this with the intoxicating smell of the peaches makes me think I may just make a bowl of this for a pre-bed snack.

I had an appointment that I ran out the door for with Zed in tow. I pick up Xerxes to hang with the babe. They ended up being very late picking me up from my appointment so I headed to a tiny shop that serves Papusas. Imagine a tamale that has been flattened and seared- so, so good. Better than that description even. We actually make them at home and I keep considering putting my recipe on Lilly’s Table, but don’t want to overwhelm anyone since it is hardly the quick & easy meals I usually put up there. Anyways, I bought a green chili papusa and a couple of pork tamales, each came with appropriate sides black beans, salsas, etc. I ate inhaled nearly half of it before Xerxes arrived. He took the rest to work.

The next part of my day involved tearing my car apart in hot pursuit of a missing item and putting Zed to sleep only to have him wake up soon after. That seems to be most of his day. Oh well. He is finally blissfully asleep now.

Xerxes had to work late, so we decided to bring him dinner and dine with him there. I cooked some soaked black beans, whipped up a dressing, and shaved the kernels off the corn on the cob. I grabbed a big old yellow crookneck summer squash from our garden and diced it into pieces. Roasted a couple of hatch chiles and diced them. Finally I diced a lemon cucumber, four peaches, two plums, and a sweet onion. The mess was tossed together, just in time for Zed to beg for my attention. Lulu took over cooking and grilled a few chicken thighs. She made the skin perfectly crispy and fabulous.

photo-56

I fizzed up some sparkling water and loaded a bag with plates, silverware, small mason jars, cloth napkins, chips and salsas. As soon as the chicken we packed it up, stuffed ourselves and the food in the car to head to Xerxes’ work. We met him at a round picnic table outside and dined under the sunset. It was a fun way to hang with him in the midst of his hectic day.Juliette at Papa's WorkSince we were in Golden, Lulu and I decided we should grab some ice cream from the Golden Sweet Shop. I had Palisade Peaches n’ Cream and Salted Caramel. Juliette had Strawberry. Lulu also had Salted Caramel, but with Chocolate Raspberry. Unfortunately, it was quite dark and the photo I took of our ice cream was terrible.

photo-49After yesterday’s eating fest, you might be surprised we headed to the Farmers’ Market. I put out a plea a few days ago on Facebook expressing my desire to find the best peaches Colorado has to offer. It was a rough, late winter this year that was disaster for the many stone-fruit orchards around here, but some of the peaches survived and I wanted my hands on them. My dear friend Dawn responded that the Belmar Farmer’s Market had some nice selection and we planned to meet there today.Almond Peach Pancakes with Yogurt & Maple SyrupFirst, we had to have breakfast! Knowing we were getting more peaches and with two cuties sitting on the counter starting to attract fruit flies, we whipped up some Almond Pancakes and tucked a couple of peach slices into eat pancake. I am actually not a pancake fan, but these were awesome with their slightly singed fruit peaking out between flecks of the almond meal. I also often use pancakes as a vehicle for other delights such as whole milk yogurt swirled with a few drops of maple syrup. The combination means I am not starving within an hour as my blood sugar drops.

photo-46The pancakes took a bit longer to make, serve and eat, so we ended up behind schedule for our Farmers’ meet up, but Dawn and her fabulous hubby Frank welcomed Lulu, Juliette, Zed and I with open arms when we finally arrived. It has actually been two years since we saw each other during our last trip to Colorado when we were living in Arizona. It was a joy to see them and we wandered around the market until I finally decided we needed to purchase 20 pounds of peaches! Sheesh. Lulu and I agreed to can them, although, this week is a bit crazy so we will see when we can squeeze that plan in. Also, I am looking at them dreaming of amazing peach delights. This week may just become peach madness or there may be enough leftover to can.

Lunch was a bit blah, as I snuck a quesadilla into my mouth while writing frantically to get work done this afternoon. But, I had this little dude by my side so it brightened up the day:

Once I finally emerged, I was ready to start cooking again. I was planning to just pull out a medley of leftovers, but realized the bread was just enough dried out to make it unpleasant. I also was eyeing that big box of new peaches and couldn’t resist those or the few green & yellow summer squash that I picked up at the same time.

Oh the dinner possibilities!

Since we have two containers of pesto: carrot top and pesto herb butter, I realized I wanted to use those as well. Soon the salad was created. I also grilled up some corn to go alongside and we smeared it with the pestos.

The Beet Lentil Salad finished off the meal. Everything was good, but we spent most of the watching each other to make sure there was plenty of the Panzanella for seconds. It was so good, Xerxes had at least four helpings. We are all a bit full now, happily. photo-50
