I have been discussing it almost daily. We are heading out to pick huckleberries just as we did when I was a kiddo. Sharing this adventure again with my family and the addition of my husband & own children is a mini-dream come true. I have such found memories of the annual labor day camping trip with my family and the mere thought of tasting huckleberries makes me a bit giddy.
This does however mean that my commitment to blog daily for 100 days will be a bit compromised. I know you are very concerned about it.
Fear not! I have a plan. Since I am a teensy bit obsessed with meal planning, I thought you might like to see what the camping meal plan looks like. Now, despite my love of keeping all things food organized and on track, I also consider myself to be quite flexible. In other words, my plans are typically interrupted with some other crazy strategy or solution. So, when I return we will see what we actually ended up eating!
Without further ado, here is the plan:
Breakfasts
Almond Pancakes
Ideally with freshly picked Huckleberries
Breakfast Sausage
Cuban Coffee with Whole Milk
Lunches
Sonoma Chicken Salad
My Dad’s Smoked Salmon with Cream Cheese
Rolls & Crackers
with Swiss Cheese, Brie Cheese & Dijon Aioli
Fresh from the garden: Zucchini, Cucumbers, Tomatoes & Plums
Dinner #1
Fajitas
with Zucchini, Onions, Bell Peppers
Chips with Salsa & Guacamole
Dinner #2
Sausages
with Grilled Peppers, Zucchinis, & Tomatoes
and Dijon Aioli
Dessert
Oatmeal Chocolate Chip Cookies
Homemade Marshmallows
Crackers & Chocolate Bars
And here are a few photos of us making the marshmallows:
Enjoy the few days that I will be up in the mountains. And say a prayer that we get more huckleberries than we know what do with. Technically, this is impossible nor has it ever been obtained.
Regardless, I look forward to typing again with purple stained fingers!
Berry sweet dreams,
Lilly
