photo-65My Mom and I went to bed quite late, too excited to go to sleep. I had this sudo-wish I would be able to sleep in a bit, but woke up and couldn’t go back to sleep because in reality I really wanted to spend time with my two nieces since they would be leaving at noon to go home.

We were up for a couple hours before my Mom woke up, which meant we all indulged on her Homemade Honey Whole Wheat with Raspberry Jam from the backyard bushes. And Juliette had some of her Granola as well. Loveliness.

We were just starting to debate who should make the coffee when my Mom emerged and we realized we ate all of the bread that was intended for the French Toast. Opps! I jumped up and declared I would whip up Crepes. I made them with my Mom’s freshly ground whole wheat, too.

We flew last night with about four Palisade peaches that were banged up almost into jam by the time we arrived last night. I chopped them last night and gave them a drizzle of honey in hopes that their natural tendency to brown would be less. They certainly didn’t need the extra sweetness as they are so peach-packed with flavor and natural sugar.

They were the perfect pairing for crepes and I am so happy we were able to share them with our family and give everyone a little taste of what Colorado has to offer this time of year. There were also blueberries that Juliette couldn’t stop eating in handfuls out of the bowl. And of course, the traditional lemon, butter, powdered sugar and even maple syrup were there too.

My nieces had intended to give Juliette her first introduction to Neapolitan ice cream since she is such a fan of Strawberry. Since we fly in so late, the ice cream was skipped last night and we decided that even though it was 11:30am we should still have the treat before they left. With ice cream cones still in our hands we raced around packing the cars and squeezing in to take the girls to the airport.

We got back later than anticipated and ended up finally lunching by 3pm. We made Ham & Cheese Sandwiches packed with cucumbers and tomatoes and the salads from last night were alongside. We also decided during lunch to go to Carmine’s Restaurant for dinner as tonight was spaghetti night.

Post meatball snooze

We arrived just a few minutes late for our 6:45 reservations and settled into the chewy bread, iceberg lettuce salads and the guys had some La Rossa beer. Juliette, exhausted by travel and the late night/early morning with cousins, fell asleep during the 5 minute car ride. Normally, it doesn’t take much to wake her, especially for a spaghetti dinner, but she stayed sprawled out on Xerxes lap almost snoring. We made several failed attempts to rouse her, but she did finally open her eyes to the smell of the gigantic pasta bowl being placed on our table. She was awake long enough to devour a meatball, sausage, spaghetti and any olive she could grab out of the salad. Afterwards, she started to fade back into slumber.Carmine’s is a darling restaurant serving family style meals Thursday through Sunday with a different daily menu each night. Every Friday is spaghetti night, Saturday is rigatoni and Sunday is lasagna. If we were staying longer I swear we would probably go back to try a different night as it is right up my Italian food obsessed husband and daughter’s alley. Every meal comes with warm bread and endless salads.

While the meals all sound great, the best part of Carmine’s are the sausages! And the meatballs, too, but the sausages are soft, homemade with a touch of spice. In the end it was a ton of food, but I found myself a bit sad in the final bites of sausage, knowing it would be awhile before we met again.

We paired the entire meal with a local merlot from Gordan Brothers, which was delightful. The wine in this region is just by far my favorite. I am slightly biased having been raised here, but  there is a richness to the wine that I have yet to enjoy elsewhere.

Xerxes and I have an obsession with Tiramisu. My sister made our wedding cake Tiramisu style as we are both in love with it. We have gone to the most disappointing Italian restaurants and Xerxes will order the Tiramisu regardless. Tonight, there was no Tiramisu on the menu, but thank goodness because we tried the Amaretto Bread Pudding instead and it was just lovely. It is one of those dishes I know I will dream of recreating the next time we have a loaf of dried out French bread.photo-66We headed back for a nice evening chit-chatting with my parents, looking for new t-shirts on Threadless for Xerxes (and maybe me!?) and to watch an episode of the Big Bang Theory.
